Bird Nest Jellybean Cookies

We make these yummy treats every year because they are fun to create and yummy too.  Bird Nest Jelly Bean Cookie are great for wrapping up individually for treats.


  • 2 cups butterscotch chips
  • 1 cup peanut butter
  • 2 cups chow mein noodles
  • 1 cup coconut dyed green with coloring (optional to add sprinkles)
  • jellybeans or egg shaped candies (We love the Starburst jellybeans)

What to Do:

Cover a tray or cookie sheet with waxed paper. Melt the butterscotch chips and peanut butter together in a glass bowl in the microwave (in slow intervals stirring regularly until melted and creamy). Pour over chow mein noodles and stir.

Butter your fingers so that the mixture won’t stick to your hands.  Kids love this part.

Take handfuls of the mix and then shape it into little nests about 2-3 inches in diameter pushing your fingers in the middle to make a home for the eggs (aka jellybeans).  Put a pinch of the green coconut in the centers with a few eggs then refrigerator.

After about 30 minutes, they will be chilled and ready to either eat or wrap up and give as little treats to friends.  Ta Da!
